What Makes the Perfect Espresso? (And Why Orion Is Built for It)

Now I’ve been roasting coffee for over 30 years, and I can tell you, espresso is one of those things people either overcomplicate… or completely underestimate.

It’s not just “strong coffee.”
And it’s definitely not just about the machine.

A perfect espresso? That’s a chain of decisions. And every link matters.

Let’s talk about it.

Espresso Isn’t a Bean

I hear this all the time: “What espresso beans do you use?

Truth is, espresso isn’t a type of bean, it’s a method.

Hot water, high pressure, short extraction time.

That’s it.

What does matter is how the coffee is roasted and blended to behave under that pressure. And that’s where things get interesting.

What Makes a Great Espresso (From a Roaster’s Perspective)

When I build an espresso blend, I’m not just thinking about flavor. I’m thinking about performance.

Because espresso is unforgiving.

You’ve got about 25–30 seconds to get everything right.

So here’s what I’m looking for:

1. Structure

Espresso needs body. It should feel full, not thin.

That’s what gives you that satisfying, almost syrupy mouthfeel.

2. Balance

Too bright? It tastes sour.
Too dark? It tastes burnt.

You want sweetness, depth, and just enough acidity to keep things lively, not sharp.

3. Crema

That golden layer on top? That’s not just for looks.

Good crema means proper development, fresh beans, and a balanced roast profile.

4. Consistency

This might be the most important one.

If a coffee tastes great one day and falls apart the next, it’s not a great espresso blend.

It needs to perform, every shot, every barista, every day.

Absolutely.

You don’t need a $5,000 machine. But you do need to pay attention to a few things:

  • Fresh beans (this matters more than anything)

  • A consistent grind

  • Proper dose and timing (around 25–30 seconds)

  • And a little patience
